Chocolate chip rainbow cookies

One of my New Years resolution was to buy less processed food and to make more things myself. Not like we eat canned and frozen food a lot, but there was always a frozen pizza in the freezer and a box of cookies in the pantry. And since all of those store both cookies have palm oil ( the worst for our health ) and are usually packed with sugar& salt, I have decided to make my own. I have been trying different recipes, and this one has passed the test. Unfortunately home made cookies in my kitchen mess up my other New Years resolution: less sugar more exercise 😉 .

This’s recipe makes 12 rather big cookies, if you need more double the ingredients.


1 cup soft butter
1 cup brown sugar
1/4 teaspoon vanilla extract
1 egg
1 1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

1/4 cup Chocolate chips
Sugar stars

Start by mixing the butter with sugar, then add vanilla and an egg. When it’s all smooth add slowly the rest. In the end add chocolate chips and sugar stars. Scoop by a spoon on the baking sheet leaving around 3 cm in between. Bake on 400 F for around 8 min. Serve with cold milk 🙂 .
