Super moist zucchini brownie

This is my version of one great and super healthy brownie from my new favorite cook book : How to feed a family from the Sweet potato chronicles. I changed it a bit, because I wanted something simpler and easer. But I’ll also admit that I don’t have all these fancy flours they propose at home. And cause I’m not a huge fun of dark chocolate. Nevertheless I strongly recommend that cookbook, it’s really jam packed with fun and healthy family recipes! And this zucchini brownie is extremely moist, and so much healthier then the classic version, it can almost count as a veggie portion, right? 😉

1/2 cup melted semi-sweet chocolate
1/4 cup melted butter
1 cup sugar
2 cups peeled zucchini
1/3 canola oil
1 table spoon Greek yogurt
3 eggs
2 table spoon cocoa powder
1 tea spoon vanilla extract
1 1/4 cup flour
Pinch of salt

Mix melted chocolate, butter and sugar. Add zucchini, oil and yogurt. Add eggs, one at a time. Add cocoa, vanilla, flour and salt. Mix. Pour the batter to baking pan and bake on 350F for around 25 min. When cooled , you can decorate with icing sugar.

My daughter had a lot of fun with that part of the brownie preparation.

She just tried to lick the icing sugar of the brownie…

The little hearts turned out really cute, unfortunately they didn’t last long.
