Easy vanilla cupcake with pink vanilla icing

Happy new year ! Let’s have a pink vanilla cupcake with a mini marshmallow on the top, for the 2014 ! To a sweet and positive new year 🙂 ! I made these for a little get together that we had with friends, and not only they are so good, but also a bit healthier then usually cupcakes intend to be. I used avocado oil in stead of butter, and honestly it turned the normal cupcake in to a what-did-you-put-in-to-it sort of a treat 🙂

2 cups flour
1 cup sugar
1 teaspoon baking powder
1/4 cup avocado oil
2 eggs
1/4 cup milk
1 teaspoon vanilla extract

icing:
1/4 cup softened butter
icing sugar
vanilla extract
2 drops of red food colorant

Mix the dry ingredients, then add the avocado oil, eggs, milk and vanilla extract. it should make exactly 12 cupcakes. Bake for around 25 min on 350 F. For the icing make sure that the butter is soft, and mix it all on high speed until it’s nice and fluffy. Place a mini marshmallow on top and enjoy the new beginning 🙂
