Winter breakfast : banana & peanut butter pancakes

Christmas is just around the corner, my Christmas tree is decorated, all the gifts are wrapped, the snow is falling. We moved about a week ago and it’s our first week at home. It’s amazing how fast you can actually feel at home, when all is unpacked, and it seems like you have always belonged there. Well, this is how I feel . And here is our first weekend family breakfast that we had here. I served these pancakes with some Greek strawberry and lemon yogurt, and since we have so much snow these days, I thought that my little girl would like a snowman on her plate. And of course she did 🙂 I hope you’ll like it too .

1 cup flour
1/4 cup icing sugar
2 eggs
1/2 cup milk
1 mashed banana
1 spoon peanut butter

2 spoons of butter

Mix all of the ingredients except for butter that you’ll use for cooking pancakes on the frying pan. Your batter should be liquid bu not too runny. Make sure that your frying pan is hot, and the butter evenly melted before you start making your pancakes. Turn them as soon as they stop sticking to the pan, after around 3 minutes, then turn them gently on the other side. Enjoy them hot, with some yogurt or chocolate. Or anything you wish, like fruits, maple syrup, or some chocolate. Have a great day !
