Fluffy & delicate pumpkin pie


This light and yummy dessert is made with coconut milk and graham crumbs, and has a delightful light texture. Served with whipped cream makes a delicious, yet still quite healthy dessert.. I mean pumpkins are healthy, so a pie made of it, with just a bit of brown sugar, also is, right? šŸ™‚

2 cups graham crumbs
1/4 cup of melted butter

2 cups pumpkin pure
1 cup coconut milk
5 egg yolks
1/2 cup brown sugar
1 tsp cinnamon
1/8 tsp coves
1/8 tsp nutmeg
pinch of salt

1 cup cream
1/4 cup sugar

Mix together graham crumbs and butter, press in firmly to the bottom of your plate. Mix pumpkin pure, with coconut milk, egg yolks, sugar and spices. Pour the mixture over the graham crust and bake on 350 F for around 30 min covered with aluminium foil, and then uncovered around 30 min. Let it cool before serving. Whip your cream with sugar. Serve. Enjoy šŸ™‚
